Dr Eli Gray-Stuart PhD

Senior Lecturer in Packaging Technology

Doctoral Supervisor
School of Food Technology and Natural Sciences

I am a research officer and Lecturer in Packaging Technology. My two primary research interests are in food packaging and food oral processing. Currently my work is focused on the development of mathematical models for heat and mass transfer in packaging systems.  This has included investigating ways to improve the thermal performance of corrugated fibreboard in the cold chain, and how models of transient moisture transfer in fibreboard could be used to inform package design. I also have a keen interest in how consumers interact with packaging; specifically how functional packaging design can influence and enhance the consumer experience.  On the food side, I have developed conceptual and mathematical models to describe food breakdown and bolus properties during chewing, and am interested in how modelling could be used as a tool to aid food design and increase our understanding of oral processing.

I am a research officer and Lecturer in Packaging Technology. My two primary research interests are in food packaging and food oral processing. My research is mostly applied with some theoretical elements, the application of mathematical modelling is a central theme in both my research areas.
